This was a long time favorite sammie at our cafe! It’s pretty close to a basic turkey sandwich, but with some undeniably tasty twists! The original recipe calls for Bridge Sauce, but it is also soooo good with cherry chilpotle hummus as a replacement for the mayo, that I’ll give you both options below! Enjoy!

- 4 ounces sliced smoked or roasted turkey breast
- 3 pieces organic local bacon
- 1 dollop The Redheads Bridge Sauce
- 2 slices provolone cheese
- 1 small handful mixed greens could also use 1-2 romaine leaves; washed and torn in half
- 2 slices tomato
- 1 small dollop mayo or cherry chilpotle hummus!!
- 1 small dollop mustard yellow, or better yet, a spicy brown or dijon
- 2 slices your choice of bread we like Italian or ciabatta!

- Fry bacon in frying pan, on flat top, or bake on baking sheet in oven until cooked or crispy (whichever you prefer). Remove from heat and set on paper towel. Pat excess grease off with paper towel.
- Heat turkey in saute pan or on flat top grill until it starts to brown.
- Lightly toast bread. Drizzle mayo (or cherry chilpotle hummus), mustard, and The Redheads Bridge Sauce on one slice of lightly toasted bread. On the other piece, place cheese, bacon, and turkey and put back on grill. Cover until cheese melts.
- Remove from heat and top with mixed greens and tomatoes. Cover with sauced piece of toast, slice, and enjoy!
You may want to play with sauce amounts based on your preference - we like our sauces, so there's a lot there! You may also prefer to use the Bridge Sauce paired with the mayo instead of the hummus. Then when using hummus in place of mayo, skip the Bridge Sauce. Find your preference!
We like to serve this with a crunchy pickle and tortilla chips to scoop up any sauce that drips out!
