Marinated Tofu Sandwich

Ingredients
  • 8slices your choice of breadwe like 7 grain or multi grain
  • 1block (1 pound) firm or extra firm tofu
  • 4-8slices aged white cheddarcould also use shredded white chedder
  • 1tub The Redheads Pesto Hummusalternatively, use The Redheads Righteous Romescu!
  • 2medium carrotsshredded
  • 4handfuls mixed greens1 handful per sandwich
  • 1large ripe tomato
  • 2 Tbsp dijon or brown mustard
  • 1cup The Redheads Balsamic Vinaigrettefor marinade!
Instructions
  1. Cut block of tofu in half and then cut each half into 1/2 inch strips. Using a bowl, marinate the tofu in 1 cup of The Redheads Balsamic Vinaigrette and 1/2 cup water. Cover bowl and put in fridge. Let it sit for at least 4 hours or overnight if possible.
  2. Using medium heat, warm up a frying pan and take marinated tofu from bowl (shaking off any excess marinade) and cook until a semi-crispy edge forms. Cook tofu on both sides, place on open plate and let cool.
  3. Turn broiler on medium. Place 8 slices of bread on cookie sheet, place in oven and warm bread on both sides for 1 minute. Take cookie sheet out of oven and sprinkle white cheddar on 4 slices. On the other 4 slices, spread a generous amount of The Redheads Pesto Hummus and pile on shredded carrots and 3 slices of cooked tofu. Put cookie sheet back in oven under the broiler until the white cheddar is melted.
  4. Finish each sandwich with two slices of tomato, brown mustard and mixed greens. Put the two halves of the 4 sandwiches together, giving each a firm press and slice in half. Serve and enjoy!
