Fresh, warm, saucy, creamy cheesy, crunchy, and soo delicious! This Veggie Sandwich recipe uses our Presto Pesto Sauce and our Tasty Tahini Sauce, which both come frozen. It is versatile, you can pick in-season veggies to suit your taste.
1large handfulveggies of your choice - slicedwe like zuchinni, carrots, red/yellow/orange peppers
1-2slicesprovolone cheesedepending on preference and size of bread
1dollopThe Redheads Presto Pesto Sauce
1 dollopThe Redheads Tasty Tahini Sauce
1small dollopmustard - we like a brown, like Beck's
1 handfulmixed greens or a couple romaine leaves
2slicesbread - we like a multi grain!
Grill veggies in aluminum foil or toss them in a sautee pan or on a flat top grill and cover. Cook until they are al dente or still a bit crunchy.
When veggies are almost done, toss the bread either on the grill or in a toaster.
Drizzle The Redheads Tasty Tahini and Presto Pesto on one slice of toast and mustard on the other. Layer the cheese, then mixed greens, and tomato slices on one slice of toast and pile grilled veggies on. Lay the second piece of toast on top, slice in half and enjoy!
We like to serve this sandwich with a crunchy pickle and potato chips or tortilla chips to scoop up any veggies/cheese/sauce that made it's way out of the sandwich and onto your plate! We also like it with pasta salador coleslaw!
