Grilled Chicken Kebabs
  • 8 wood or metal skewers
  • 2lbs. boneless, skinless free range chickencut into 1 1/2 inch cubes
  • 1/2cup fresh cilantro
  • 1/4cup extra virgin olive oil
  • 2Tbsp fresh lime juice
  • 2tsp minced garlic
  • 1tsp smoke spanish paprika
  • 1/2tsp freshly ground black pepper
  • 2bunches green onionsroots trimmed off
  • The Redheads Righteous Romescu Sauce
  1. If using wood skewers, soak in cold water for at least 30 minutes before using. In a large bowl or resealable plastic bag combine chicken, cilantro, 3 Tbsp olive oil, lime juice, garlic, salt, paprika, and pepper. Toss to coat, then let marinate for 25 minutes, chilled.
  2. Preheat a gas or charcol grill to medium high. Thread chicken on to skewers, discarding marinade. Drizzle green onions with remaining olive oil. Lay skewers on grill (cover if using gas) and cook 4 minutes. Turn skewers over, lay green onions on grill, cook 4 minutes or until chicken is browned and cooked through and the onions are charred in some places. Top with The Redheads Righteous Romescu Sauce and serve!
