Ingredients
- 8 wood or metal skewers
- 2 lbs. boneless, skinless free range chicken cut into 1 1/2 inch cubes
- 1/2 cup fresh cilantro
- 1/4 cup extra virgin olive oil
- 2 Tbsp fresh lime juice
- 2 tsp minced garlic
- 1 tsp smoke spanish paprika
- 1/2 tsp freshly ground black pepper
- 2 bunches green onions roots trimmed off

Instructions
- If using wood skewers, soak in cold water for at least 30 minutes before using. In a large bowl or resealable plastic bag combine chicken, cilantro, 3 Tbsp olive oil, lime juice, garlic, salt, paprika, and pepper. Toss to coat, then let marinate for 25 minutes, chilled.
- Preheat a gas or charcol grill to medium high. Thread chicken on to skewers, discarding marinade. Drizzle green onions with remaining olive oil. Lay skewers on grill (cover if using gas) and cook 4 minutes. Turn skewers over, lay green onions on grill, cook 4 minutes or until chicken is browned and cooked through and the onions are charred in some places. Top with The Redheads Righteous Romescu Sauce and serve!
Recipe Notes
*Try replacing the marinade with The Redheads Balsamic Vinaigrette for something a little different!
