Black Bean Burger Tacos
  • 4 The Redheads Black Bean Burgers
  • 2Tsbp olive oil
  • 1/2 oniondiced
  • 1 bell pepperdiced
  • 1 tomatodiced
  • 1 clove of garlicpeeled and diced (optional)
  • 2-3Tbsp taco seasoning – to tastepackaged or follow the recipe below
  • 1cup chopped lettuce
  • 1/2cup chipped cilantro
  • 1cup desired cheese
  1. In a medium saucepan, caramelize onions and garlic in olive oil. In a separate saucepan start to cook veggie or black bean burgers. As they begin to brown, break them up with a spatula (Video to make crumbles) . Add caramelized onions and garlic to browning veggie or black bean burgers. Add tomatoes and bell peppers. Sprinkle taco seasoning over the veggie burger mixture evenly. Toss together well. Continue chopping up the veggie burgers until they are the consistancy of taco meat.
  2. Serve with corn tortillas, chopped cilantro, salsa, lettuce, cheese (or choice of vegan cheese).
  3. Other serving suggestions: You can serve with avocado, guacamole, and/or sour cream.
  4. Make own taco seasoning
    In a small bowl mix together 1 Tbsp chili powder, 1/4 tsp garlic powder, 1/4 tsp onion powder, 1/4 tsp red pepper flakes, 1/4 tsp dried oregano, 1/2 tsp paprika, 1 1/2 tsp ground cumin, 1 pinch of cayenne pepper (optional), 1 tsp sea salt, 1 tsp black pepper. Note: can multiply the recipe and store in an air tight container in a cool dry place for future veggie burger tacos!
