We love beets at The Redheads and really, everything about this beet salad – it’s one of our very favorites! It was a salad at our cafe seasonally and it’s really a classic. We’re excited to pass this salad along to you if you’ve never enjoyed all the wonderful flavors of this salad! It’s fresh, earthy, substantial, crunchy, AND even creamy with the goat cheese! And The Redheads Balsamic Vinaigrette ties it all together!

- 5 ounces Organic Spring Mix one regular sized container or bag
- 4 large roasted, peeled, cooled, and diced beets 1/4 inch pieces
- 1/2 cup red onion julienned
- 3/4 cup Idyll Farms goat cheese
- 1/2 cup toasted almonds or walnuts lightly chopped
- 3/4 cup The Redheads Outstanding Balsamic Vinaigrette

- Put spring mix in a large serving bowl or divide evenly between plates and top with diced beets, julienned onions, toasted and lightly chopped walnuts or almonds, Idyll Farms goat cheese, and The Redheads Balsamic Vinaigrette.
- Serve and enjoy!
For a heartier meal, before adding other toppings, top the spring mix with a cup of cooked quinoa.
We like to serve this salad with a piece of toasted and buttered 7 grain bread. May also be served with a creamy and/or hearty root vegetable soup, mmmm!
